4 boneless and skinless chicken breast fillets, sliced into thin strips
1 pack Fajita Spice Mix or why not use the suggestions below to make your own?

1 medium onion
1 red pepper
1 yellow pepper
15ml (1 tbsp) Olive oil
8 flour tortillas
1 x 113g pot Guacamole Dip
60ml (4 tbsp) Fresh Soured cream or Crème fraiche
Cheese (optional)
To garnish: Fresh lime wedges and salad, and salsa dip


Stage 1

Place the sliced chicken in a bowl with the spice mix and 1⁄2 tablespoon of olive oil.
Toss to coat the chicken evenly, then cover and leave to stand for at least 15 minutes. If you’re doing this stage in advance, cover everything with cling film and store it in the fridge until you’re ready to cook.

Peel and thinly slice the onion. De-seed the peppers, and thinly slice.

Stage 2

Place the chicken on a plate ready for the table (and if it has been in the fridge, allow it to come to room temperature). Place the peppers and onion on a separate plate for the table, and place the guacamole, soured cream or crème fraiche and salsa dip into dishes.
Place the tortillas under a hot grill for approx. 1 minute or until hot, turning once before bringing to the table.

Stage 3

Each person should cook the peppers and onion they need for one tortilla on the hot Rondue until they begin to soften. They can then add the chicken strips and heat until they’re golden, sizzling and fully cooked.
Place a serving of the chicken, pepper and onion mixture onto each tortilla, then top with a spoonful of guacamole, soured cream or crème fraiche and cheese (if required).

Roll up the tortilla and serve with lime wedges, salad and salsa dip.


Mix 1

1/4 tsp garlic powder

1/4 tsp celery salt
1/4 tsp onion powder

1/4 tsp cayenne pepper

1/4 tsp Chilli powder

1/4 tsp dried oregano

1/4 tsp allspice

Mix 2 - makes the equivalent of 3 packets of commercial Fajita Seasoning Mix

2 Tbsp. chilli powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube

1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin

Mix 3 – enough for 4 people

1 tbsp. cornstarch
2 tsp. chilli powder
1 tsp. salt
1 tsp. paprika
1 tsp. sugar
3/4 tsp. crushed chicken bouillon cube

1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. cumin
